Baked Glass Noodle With Fried German Duck Leg
1. Vermicelli, soaked in water until soft, 120 g.
2. German duck leg, fried until golden brown, 1 calf
3. Coriander root, smashed 5 g.
4. Garlic crushed 10 g.
5. Ground black or white pepper 1 g.
6. Ginger smashed enough 15 g.
7. 20 grams of hard pork fat, thinly sliced
8. Oyster oil 30 g.
9. Light soy sauce 10 g.
10. Seasoning sauce 10 g.
11. 12 grams of granulated sugar
12. Dark soy sauce 2 g.
13. Sesame oil 5 g.
14. 100 grams of broth or wate
Cooking Method:
1. Mix glass noodle with all seasonings.
2. Place the lard on the bottom of the pot, add mixed glass noodle following by the soup.
3. Bring it to a heat for about 5-7 minutes, wait until the grass noodle is cooked.
4. Fry German duck leg then place on the top of grass noodle, decorate with celery, cover with a lid and serve with seafood sauce or sour sauce (Jig Cho).
