Ingredients and Condiments
1. Ingredients: Stir-fried noodles with water until soft 120 g.
2. Smoked duck breast cut into thin slices 100 g.
3. Coriander root smashed 5 g. Garlic crushed enough 10 g.
4. Black peppercorns or coarsely ground white 1 g.
5. Ginger smashed enough 15 g.
6. Hard pork fat, sliced into thin slices 20 g.
7. Shiitake mushrooms, water and cut into thin slices 30 g.
8. Oyster oil 30 g.
9. White soy sauce 10 g.
10. Seasoning sauce 10 g.
11. Sugar 12 g.
12. Black soy sauce 2 g.
13. Sesame oil 5 g.
14. Broth or water 50 g.
15. Celery for topping
Cooking Method:
1. Mix glass noodle with all seasonings.
2. Place the lard on the bottom of the pot, add mixed glass noodle following by the soup.
3. Bring it to a heat for about 5-7 minutes, wait until the grass noodle is cooked.
4. Place sliced smoked duck breast meat on top, decorate with celery, cover with a lid and serve with seafood sauce or sour sauce (Jig Cho).
